Pad Kra Pao - my favourite spicy Thai recipe! 🇹🇭

Home Cooking Sessions: Pad Kra Pao. An incredible dish from Thailand that’s full of spice and umami. My recipe below! 👇🏽😍🇹🇭🌶️

1. Start with the meat - ground beef or pork, about 3-400g for 2 peeps. I used some pork loin chops, de-boned and thrown into the mincer twice for a finer texture
2. Using a pestle and mortar or food processor, crush up 3x cloves garlic, 6x Thai red chilli’s + 1x shallot
3. Smash and grind until you form a coarse paste
4. Heat up a seasoned wok to med-high, once smoking, add in some beef tallow or neutral, high smoke-point oil
5. Throw in your ground meat, season with sea salt and leave to sear
6. It’ll take some time to get good colour, so wait for the excess moisture to evaporate, then let it fry and brown
7. Once sufficiently coloured, remove and set aside, then throw the chilli paste into the same pan and sauté 1-2 mins
8. Once fragrant, add in a few chopped green beans and sauté for 1 min, then add back in the meat and toss to combine
9. For the sauce: combine half a puck of palm sugar, 2tbsp dark soy, 2tbsp light soy, 1.5tbsp fish sauce, 1.5tbsp oyster sauce
10. Add in 1 more Thai red chilli + the sauce, toss to combine, then add in a bunch of holy basil or Thai if you can’t find any - let this all fry / caramelise for 1 min to bring it all together, then take off the heat
11. Lace a pan with neutral oil, then add in one egg white and allow it to fry/bubble up. Once it’s crispy round the edges, add the yolk to the centre and remove the egg after 1 more minute
12. Serve this over fluffy Thai jasmine or sticky rice, topped with your crispy egg
