The movements of the sea-monsters were based on reference footage of saltwater iguanas. The animators studied the way these reptiles swim, and modeled the movement of the sea-creature's tails on the distinct left-and-right movement of saltwater iguanas. As for the clothing, they relied on a bit of biology, but mostly their imagination.

It's crazy how many details we miss. For example, in Encanto there are a lot of cultural references and clothing designs. Like how Abuela has small mountains on her dress to represent the mountains she climbed to find the Encanto. As always, incredible job Disney!
