Beef ribs would have to be one of my all-time favourite Texas BBQ cuts. So I stoked when the crew from the Townsville BBQ Battle asked me to make a video demonstration for them on 'How to Trim Beef Ribs'.

Why do I love short ribs? It's simple really. These beef short ribs would have to be the ultimate set-and-forget cut. Simply prepare them, throw in the smoker and forget about them 'til they're done. But in this video we're focussing on how to select and trim up these low and slow smoked beef ribs.
