Ground Lamb with Marinated Halloumi and Herbs

Because ground lamb contains a generous percentage of fat, you can smash it into a hot skillet and let it develop a nice crust without worrying about it drying out. Can’t say that about ground turkey! Good lamb is naturally earthy and a little grassy, and its flavor won’t get buried despite this big pile of fresh herbs and salty marinated cheese. If you are sensitive to even a whiff of gaminess, seek out domestic, grain-finished lamb, which is sweeter and milder than the 100 percent pasture-raised imports from New Zealand and Australia.

I raise lamb on my Homestead and have many many pounds of meat that are destined for the grinder. I know EXACTLY what I want to do with some of it!

FWIW- our lamb is 100% grass fed and it is not gamey at all! Find a local farmer, people! They can get you some GREAT stuff that is humanely raised and so much better than what you get at the grocery store!

I also had an aversion to dill. When I was young, my mom would find a flavor that she loved, and EVERYTHING she made for 3 months had that flavor in it. With dill, she extended that time to about 6 months. About a year ago, I rediscovered dill and found that I truly do love the herb. ❤

This recipe looks great - I am always down for anything with lamb and anything with halloumi, although I think I haven’t made then together before.

I also previously had a dill aversion and got over it in a pretty similar way. When I was in high school, my brother was using dried dill and the top came off, so much dill came out and it tasted so nasty. I couldn’t do dill for a long time after that, but then I had a salad that had a bunch of different kinds of tender herbs mixed in with greens. It was so good that I changed my opinion right then and there. I still don’t feel that stoked about dried dill, but I can do a little - it just tastes so strong compared to fresh.

I have been a dill lover since I was about 8 - we went to a 4th of July celebration at the local historical museum and there was a bake sale. Someone had made the most AMAZING dill corn bread muffins. I still think about those.

OMG Carla, you know what cured my chicken liver aversion (at least for this one dish but I'm truly obsessed with it) - paté di fegato toscano! You have to try it if you haven't already!

As someone in the UK where we had sheep’s in the fields all year round, I eat grass fed for the welfare as much as the taste. (Which is also delicious)

It's very highly used in the Middle East, especially as a breakfast food. Our Arab countries that are predominantly from the Levent. Makes sense, I guess, literally right next door to Cyprus.
