I don't find it a problem when using baby spinach (as we call it in South Africa), but definitely needed if using the large spinach leaves. ๐Ÿ˜Š

I find that unless you boil / blanch the spinach it adds too much water to the sauce.

I usually boil the spinach out, and squeeze the living daylights out of it with a cheese cloth.
