HOW TO FREEZE LATKES - Make-Ahead Tips and Rewarming Times (HANUKKAH 2019 COLLAB)

Freezing latkes frees up your time and sanity if you're hosting a large group or are cooking for many parties over the Hanukkah holiday. Here's how I do mine!

Note: for my mini latkes, the rewarming times are roughly:
250: 8-12 min for thawed latkes
300: 22-25 min (flipping midway) for latkes baked straight from the freezer

Times will vary based on your size of latke, so monitor closely (usually I check mine every 5 min).

Your latkes look scrumptious! Planning ahead and organizing for the freezer makes a big difference when it's time to pull food out and serve.
A few weeks ago you asked for video requests and suggestions. I was at Costco this week and got a new product by Barilla pasta. It's "pasta" made with 100% chickpea flour, the only ingredient. The shape is rotini. I wanted to try this because I love pasta in the winter but worry about all the carbs, especially if I have it more than once a week. With chickpea flour, you don't have to worry about carbs, sugar spikes, etc.
The rotini was delicious. I topped it with Rao's Marinara (also from Costco) and enjoyed every bite. Great taste and texture. I didn't miss wheat pasta, and in fact prefer the chickpea version. I cooked it in the microwave for about 11 minutes, then you drain it and serve. Do not rinse. I used a glass Pyrex bowl for microwaving, one cup of rotini in about 4 cups of salted water. I don't think I'll go back to wheat pasta now. Barilla also makes a red lentil flour version in addition to the one with chickpea flour.
So all of that is to suggest that you might consider doing a video on using alternative "pasta" dishes, like ones with chickpea or red lentil "pastas".

This is such a great video Melissa. I have been viewing the other Hanukkah collab videos from the other Jewish moms here on YouTube. You gave me a reply on one of them and I responded.
