Recipe

Ingredients

- 2x marrow bones, cut lengthways (ask your butcher, with notice they should be able to cut them for you)
- Sourdough
- 1 bunch parsley
- 1 shallot
- 50ml lemon juice
- 100ml olive oil
- Salt and pepper

Method

1. Season the marrow bones with salt and pepper and roast in a 220°c oven for 20-25 minutes.
2. Pick the parsley and slice the shallots nice and thin.
3. Mix olive oil and lemon juice in a bowl and add the shallots, leave this for 5 minutes for the shallots to mellow slightly.
4. Toast the sourdough with some olive oil.
5. Once your marrow is ready, take out of the oven and place on a plate.
6. Dress the parsley with the oil and shallot mix and serve next to the marrow with the toast.
7. Enjoy!

Oooh reminds me of a Römmertopf dish my mom used to make. There were bones in that as well, and then when it came out of the oven we'd scoop it out and mix it into the rice and veggies. I loved that dish with all my heart. Thanks for the inspo Andy!
