You're making me hungry! I have had borscht from a woman from Lviv (Lvov) and varenyky (stuffed with potato, raspberry, or blueberry). I was surprised that you mentioned salo. The majority of my Russian understandings are from my friends who grew up in Soviet Ukraine... because there is a large Ukrainian and Russian diaspora in Philly, New Jersey, and New York. My Ukrainian friends are so obsessed with salo that I would drive 7 miles to the nearest Russian-Ukrainian grocery store to get salo for them. I'll admit I do not like salo... and I have eaten them on many occasions. I love shishlyky! First time my Ukrainian friend gave me pancake... I put maple syrup on... and it tasted wrong... and he laughed... saying that his pancakes are made from potato and I'm supposed to eat them with sour cream! Vodka is vodka. Pivo is pivo. It took me a while to acquire a taste for Kvass... I'd rather drink Coca Cola... but I can drink Kvass without making a face. I have many more experiences to share... but then this would turn into a long post. If all else fail... I will take a kovbasa. Now I gotta eat because of you.

What do you think you will do when you go back, since you are now a veg. Russia seems like a very "meat and potato" society, meat being a focal part of the meal. Its easy for us to become spoiled living in California, having things like veggie burgers, faux meats, etc, pretty available. I don't image it being impossible back east, but I imagine it being tougher. Do you anticipate needing to bring some vegetarian meal staples when you take another trip back, or feel you can manage. Yeah there are always veggies, but a salad gets boring rather quickly if you are not into having it. <3
