I’m a professional knifesmith and sharpener. That’s a good edge. However the “aerospace grade steel” is bullshit. They should tell you the steel composition but it is what it is. Enjoy your new knife!

Aerospace grade steel is just steel that was looked at by a aircraft inspector.
It won't hold a edge any better

It's BG42 stainless steel and can have between 52-63 HRC. That's a big range imo and when they don't mention the hardness, I generally think it's below 60HRC

I’m a huge knife enthusiast.. that is definitely a sharp knife. HOWEVER, “aerospace grade steel” means literally nothing lol

Knife sharpness has more to do with sharpening then brand and the blade geometry is also just as important

It's made with BG42 steel. If you have a hard time with your cheap department store knives chipping. THIS IS NOT THE STEEL FOR YOU. Roughly 3 times more likely to chip than 440c stainless. A fancy steel designed for ball bearings. Not the best for an abused knife. Will hold an edge. It just wouldn't be my choice of steel over some other high-end options.
Not going to completely hate on it, you just got to baby this knife a bit.

I'm an Aircraft mechanic and that is an Aerospace grade steel knife if I ever saw one! :))

It's just old school BG-42, great Stainless steel but bang for buck S30V is practically the same..

Unfortunately as a blacksmith, I want to inform you that those tests don't really involve the knife sharpness, but rather just the geometry of the blade . And when company's say stuff like "aerospace grade steel" they more likely then not use a cheap and underperforming steel or a totally average steel . They then jack up the price a ton

A dull knife can be sharpened, so you can create a sharp blade using a dinner knife if you want. I'm more interested in how it feels to hold the knife when cutting a variety of ingredients.
