for the loaf
250g unsalted butter
250g caster sugar
4 medium eggs
250g self raising flour
3 large lemons (zest)
1 teaspoon vanilla extract
for the icing
2 large lemons (juice)
icing sugar
method
-preheat oven to 180c
-mix all ingredients together
-add into a lined loaf tin
-bake for 40-45 minutes
-once out the oven, drizzle over some lemon juice
-leave to cool & drizzle over the icing, I also added some edible dried flowers which I got from amazon.. super cute! 🌼
