I've made this for guests several times, and it never fails to impress and satisfy. Surprisingly easy and extremely tasty. I serve them in smaller segments, as in the second plating shown here, and never omit the caviar 😃 The velouté works beautifully. Obviously, what actually goes into the dish purée is up to you. The last time, I used flounder along with about 8 large raw shrimp. The combination was excellent.
