Makes 4

Ingredients:

Two 1 ¼- 1 ½ lobsters steamed (alternatively you can buy cooked lobster meat)
1 stick of butter
Old bay seasoning
1 lemon
Top sliced hot dog buns
Chives or green onions

How to:

Remove the meat from the lobster and set aside.

In a sauce pan over medium heat melt 6 tablespoons of butter. Once the butter starts turning golden brown with brown bits remove the pan from the heat. Takes about 8 minutes. (Make sure not to burn the butter! I just constantly monitor the butter to make sure it doesn’t burn).

While the butter is melting, use the remaining butter from the stick of butter to toast the buns.

Toss the lobster meat in the warm brown butter and season with old bay seasoning to your liking.

Assemble the rolls. Place a good amount of meat in the buns, squeeze a bit of lemon over each. Top with the green onions and some more old bay if you’d like.
