Simon asks "where are you going" and it's glowing like when Simon travels between universes. Golbetty isn't gone, but she is most definitely going somewhere.

I think at this point Golbetty’s been reborn as something else. There last communication when she got on the bus implies she’s moving on to something, whatever that is Simon can’t understand or follow. Maybe it’s death but just as likely a new life where she can live as herself without obsessing over him. A very adult, and bittersweet ending.

Honestly, I thought Golbetty was transforming into the good version of Golb, "The Boss." It's the only explanation for why the Fionna universe was canonized without major issues and why Golb helped create a new universe, despite being an entity that destroys them. Essentially, "The Boss" is Golb at the same time.
Also, after the transformation suddenly Scarab gets a call from his boss.

I think it just represents Betty finally moving on, now that Simon understands the nature of their relationship - and sees that his life has worth without Betty.

She knows now, that Simon will be safe without her. Thus, she can move on - No longer tethered to her former mortal existence

I honestly love how Adventure time tells Simon's story. How it started off as just the "bad guy who keeps kidnapping princesses" kept adding up and ends with this, concluding the story of the most important character in such a satisfying way. I think Simon's story is by far the best in the series.

my theory is that golbetty has transformed Golb, golbetty's action of restoring order to Simon's life, mind, and even allowing Fiona and Cakes world to become real stopped the chaos it was bringing. Thus the nature of Golb as a chaosbringer is no more, as betty said on the bus, she's going away on a new path, meaning Golb was the chaosbringer, Golbetty is the balance maker. The birth of a new cosmic being.

I feel like people are overthinking this.
I don't think Golbetty is defusing I think she's just going somewhere else.
We saw her getting on a bus to... somewhere, not as Betty but as Golbetty, if they were to imply that Betty is no longer a part of Golb wouldn't it make sense to show her as Betty going somewhere rather than as Golbetty?
This feels like a good example of Occam's razor, where the simplest answer is probably the right one, and imo believing Golbetty is going somewhere else is simpler than believing they're defusing. I mean she just turned the Lich into a tetronimo, so she's probably off to that world to devour it.

I honestly don't think Golbetty is going back to being Golb since remember when Simon says "where are you going?" And those strange symbols appear so that's probably indicating where she's going and Golbetty is making the same energy signal that Simon uses to make a portal so it looks like Golbetty is heading off somewhere.

I believe she just went somewhere else, on a new journy. Remember, she wished too keep simon safe. So as long as he was looking for the crown, she had to be present to protect him from it. But now that simon is no longer wanting the crown, and he understands their relationship and the fact Betty is gone. She can finally move on and go her own way. Simon has finally made a sacrifice for her. Her wish was fulfilled.

I just imagine that Betty and Simon finally had their share of final moment,
the wish of the crown is fulfilled, and thus Golb is restored.
And Betty is no more.

Im pretty sure the wish is null and void. The crown has been destroyedd across all timelines and the wish of keeping Simon safe is fulfilled. Betty dies a d glob remains. Which is fitting..

Interesting to note is how the Golbetty fusion is starting to look more like original GOLB the cape is gone and the spikes are reappearing on the head of GOLB. It appears the fusion was slowly being undone.

It's crazy to me that Golbetty have relatively same level of authority if not more as The Boss in grand scheme of the multiverse. They make the unauthorized universe a canon one just like that and The Boss is like "welp it is what is, Scarab pull off now". For the longest time I thought GOLBETTY is "The Boss" but Scarabs reaction to them seems to tell us they're not exactly "The Boss" at least not the one the scarab knows or familiar with.

The theory I've found interesting is that Golb is god, but child god.

To Golbetty, Simon is 'experience', and child steps away from childhood by experience.

'Childhood's End', guess that's where Golbetty went.

She’s basically a God whose purpose is unknown and incomprehensible to all mortals and immortals so that conversation was her moving forward with what she is now

To me it's pretty clear that Betty is no longer attached to Golb. It's subtle but the last shape during the transformation is the original Golb baby form. With that said, she also was not digested. The bus scene makes it pretty clear she is going somewhere unknowable, and if you notice after simon returns to ooo a butterfly with a pattern resembling Betty's eyes gives him a kiss. The only other time I can think of a butterfly appearing in a similar manner is when Finn talks with the purple catalyst comet, and talks about his previous lives - how he was a comet, and then a butterfly. I'm not sure entirely what the symbolism behind a butterfly is, maybe the fact that they are something new and beautiful after a metamorphosis? Either way, I think it is clear Betty is either a new comet or just reborn in a similar manner.
