Hey Jon, subscriber from Italy here. To say paccheri, the cch is pronounced as a hard K. So it's 'pakkeri', with the inflection/emphasis on the a. Great videos! More chinese italian fusion please :) I miss making 四川 and Sicilian fusion food with my ex. Those were some great dishes!

The idea that braising and sous vide are essentially the same thing blows my mind. I can think of applying this to soooo many dishes 😍🥰. Vietnamese cuisines has many delicious braises 😛
