The left over tomato skins are excellent for making your own tomato bouillon. Just dehydrate the tomato skins then grind into a powder & store in an air tight container. Excellent in soups, Spanish rice, etc.😊

Putting them on their sides can also compromise the seal(especially if you use lids that don't have such a clear sign like mason jar lids, that the seal is damaged), so better let them cool upright and just turn once before using. Separation is not a bad thing.
And a little fyi, if you want to add salt to the tomatoes, don't use table salt. Something in the iodine can make canned food taste funky. It won't be harmful, just affect the flavour. Use rock salt or sea salt.

And most importantly. Never trust anyone who tells you just filling hot liquids into jars will make a can. The ONLY thing this works for is jam, anything else needs to be boiled as shown in the video.

Mom taught me this, her dad taught her, his mom taught him. Same with wine and alcohol 👌 Great skill to have, my jam from over a year+ ago is still good to this day lol

You need to add lemon juice to each jar to increase the acidity so it's safe to can. If you don't you risk botulism.

Wow, as someone who married what was once a traditional family, I’ve had to climb the ancestral ladder to find anyone able to still can so I can learn and pass down to my kids. That was before such easy and amazing content was so easily available - thank you!

My grandparents still do this method year round with most things in their garden, like right now beets. No need to keep them from separating ! Love this post ❤️

Boiling water bath has to have the jars covered with water and you should NEVER lay the jars on their sides. If you are going to show people how to can something, you should use tested, proven processes. Always refer to the USDA guidelines.

First time I've ever seen somebody water bath can without fully covering the jars in water, also first time seeing somebody laying the jars on their side after removing them! Very interesting I wonder the reason?

At home we got sooo many tomatoes and we just started skipping the deseeding part. We also leave the skin on! Just put them in a pot medium heat, blend them all and stir sometimes while boiling. Put in jars when you like the consistency. :) no difference, same tasty tomato sauce!

I remember doing this with my grandma and my mom. I was a kid so I got to squish all tomatoes up. We did tomatoes, green beans and dear meat. Those green beans were the best I'd ever had. Sadly, both my mom and my grandma are dead now. My mom died on her birthday when she was 45 (in 1999) and my grandma died unexpectedly during surgery in 2003. What I wouldn't give to have them both back so we could can together and I could actually learn how.
