▪️3 Eggs▪️Salt & Pepper▪️1 Scallion, sliced▪️1 Tbsp Olive Oil▪️1 Rice Paper▪️2 tsp Chili Oil▪️

1️⃣ Beat eggs with salt and pepper and set aside
2️⃣ Heat a pan over medium high and spread on a layer of oil; place a dry rice paper on the pan and top with scallions, salt and pepper
3️⃣ Slowly pour on the egg (if it seeps outside the rice paper perimeter push it back towards the rice paper with a spatula) and cook until egg is almost set.. drizzle with chili oil and then fold in half
4️⃣ Cut and eat like a quesadilla with more chili oil drizzled on top - enjoy!

It looks amazing everytime, but I made this twice and it just wasn't that good. I prefer a regular or rolled omelet instead. I feel the rice paper though crunchy, is distracting from the egg.

So you don't wet the rice paper first?
