Blueberry Tart Recipe

For Total Blueberry Satisfaction nothing can beat a blueberry tart. And it is just SO EASY to make! Do not put squirty cream up your nose...
Ingredients
900 g (2 lb) blueberries split into 2 equal piles
250 g (8 oz) shortcrust pastry
50 g (2 oz) sugar
2 tbsp plain flour
Icing sugar
A few raspberries (optional)
Instructions
Line a flan dish with the pastry.
Mix together the sugar and flour in a bowl. Add in half of the blueberries and toss well.
Pour the floured blueberries into the flan case and spread around evenly.
Bake at 210°C for 10 minutes, then 180°C for a further 25-30 minutes. Stir the blueberries halfway through cooking to ensure no flour or sugar is visible.
Remove from the oven and press a layer of blueberries into the hot jam. Allow to cool.
When cool, sprinkle with icing sugar and serve.

Place the blueberries with the “stars” pointing upwards to make the tart more attractive. Serve with cream or ice cream.
