Sweet Potato Nachos 🤍

Healthy and easy lunches pt. 3

Ingredients:

1 large sweet potato
1 Tbsp cornstarch
1 Tbsp taco seasoning
olive oil

black beans
shredded cheese

Toppings:

chopped tomatoes
greek yogurt/quark
avocado
jalapeños or pimientos de padron
coriander
lime juice
salt and pepper

Directions:

1. Preheat oven to 220°C. Slice the sweet potato, toss with cornstarch, olive oil and taco seasoning. Arrange in a single layer on a baking sheet. Bake for 30-40 minutes flipping halfway through.
2. Once tender and slightly crispy, sprinkle with black beans and cheese. Bake for another 5-10 minutes until the cheese melts.
3. Top with toppings of your choice and enjoy! 🫶🏼
