Ingredients:
-1 large sweet potato
-1 tbsp taco seasoning
-olive oil
-salt
-pepper

-shredded cheese
-black beans

Toppings:
-chopped tomatoes
-avocado
-sour cream or Greek yogurt
-cilantro
-jalapeños

Other optional toppings:
-pico
-salsa
-corn
-chicken
-hot sauce
-like

Instructions:
1. Preheat oven to 430F. Chop your sweet potato into thin slices. Add to a bowl and drizzle over olive oil. Sprinkle with salt, pepper and taco seasoning. Mix well and place the sweet potatoes in one layer on a baking sheet. Bake for 30-40 minutes flipping halfway through.
2. Once the sweet potatoes are baked, take out of the oven and sprinkle over black beans and cheese. Bake for 5 more minutes until cheese is melted.
3. Load up your nachos! Add tons of toppings of your choice and enjoy! 🫶🏼
