Hey just a tip for those who aren't already aware, you'll want to clean your oranges and lemons in white vinegar bath/soak before you peel them because citrus is generally shipped with a wax coating on it to keep it from rotting in transit. You definitely don't want that stuff in your cooking! Plenty of videos on YouTube teach you how to do this (also true for stuff like cucumbers). Hope it helps!

A lot of people are saying they don't drink alcohol and want a substitution! If you bake with store bought extracts then your using Alcohol! The alcohol is being baked off in oven! Or if you are using it in frostings that aren't being baked, it's such a minimal amount it's not like your going to get drunk or feel anything from using a teaspoon or so in a whole recipe! And you definitely won't fail a sobriety test! 😂 Enjoy baking!

It is much better to make the extract for 12 to 18 months.

And it is important to shake the bottle twice a day for the first 2 weeks, then once a day for 2 weeks, then once a week for 4 weeks (the entire 2nd month) and then once or twice a month until it is 12 to 18 months old.

Vanilla extract will not go bad as long as you store it in a cool dark place, preferably in a brown bottle to limit the light.

Use 2 & 1/2 beans for a pint of vodka or for some variety you can use rum or spiced rum & use the rum/spiced rum version in spice cakes & recipes that you want to have some rum and/or spice flavor as well as the vanilla.

If you wait 18 months to use the extract, it will be so strong, you will be able to use 1/2 to 1/3 of the amount the recipe calls for, making your extract last even longer.

Looked online and it seems the best place to get extract vanilla beans is native vanilla. Can't wait to start my vanilla extract!

Funny that I always seemed to get a whiff of alcohol when I use my vanilla extract. I thought it was because I was using a cheap brand. Now it all makes sense. Lol.

This is a great little tutorial, but if you want to store these longer than a couple of months, I would do this in mason jars, then strain the extract into these little jars. You want to remove the flavor source, or else the extract can get a musky-bitter flavor.
