12 vanilla beans
Vodka

Directions

Find a tall bottle that will hold at least a dozen vanilla beans. Fill the bottle with vodka. Let the beans marinate in the vodka for at least a month.

I’ve watched several videos on how to do this, and Ina has the least scientific method of doing this and her looks better than all the rest! And she’s also the only one I’ve seen to not cut the pods open.

I was lucky to purchase a bunch of Grade A Madagascar Bourbon beans right before the prices skyrocketed last year. This springtime, I decided it was time to put them to work, and made up seven 10-oz bottles of this stuff. I shook the bottles once a week, but otherwise they just sat all summer in a nice dark, dry place. Today I opened one ( it's been 4 months) and poured a tiny bit into a saucer, to taste it . OMG, it is heavenly! The smooth essence of vanilla lingers on the palate for several minutes, delighting the senses. I checked Amazon today, and the beans which I bought for $19.95 last year are now $99.95, a five-fold increase. I feel like I hit the jackpot, and like I need to put these 7 bottles in a safe .

The vanilla extract sold in stores is watered down. McCormicks vanilla extract 2oz bottle currently sells for $8.99. I’ve made two 8.5 oz bottles of vanilla for home use and it’s far better than store bought. It’s so deeply rich and flavorful I use less. Plus, homemade vanilla make excellent gifts for any bakers you may know.

I’ve made incredible vanilla with Grade B beans but after seeing this, I bought 25 bourbon grade a beans which I won’t cut or split at all this time! Never seen the squeeze method and can’t wait to try it!! Thanks Ina!!

Saw this episode (yours) years ago. Said would make when i could afford the beans. Finally made today. Can't wait to try in 12 to 18 monthes.
Now to make a bunch of small jars with just 2 beans in them and wait same 12 18 18 months. Will save and give as gifts. Remember to keep all beans submerged.

Mines been going for about 10 years - and you need to add at least a couple more vanilla beans each time you top it up with vodka. More is better - but they are about $10 per bean here in NZ at the moment !!!

Making my own vanilla extract. Bought extract vanilla beans from native vanilla. Only $2 a bean and the quality was excellent.
