The reason why you need to adjust the mixture is because the engine power if given by the combustion between oxygen and fuel. The higher you go the less air you got, so the less fuel you need to keep your power the same. So I think altitude is the only factor to take into account. Nice vid!

I like using the EGT gauge for fuel mixture. Adjusting for peak during climbout should be done but can be complicated as the higher you climb the more adjustment will be required. At cruise (about 75%) and 3000 ft or higher, I slowly lean the mixture until the EGT needle peaks and then begins to drop. When the drop starts to occur, I enrich the mixture for peak. I try to stay away from running lean of peak. In real life this can cause engine problems which can cost lots of money.

To lean the mixture in real life, we have a screw like device on the mixture we can use to precisely lean, we keep screwing the knob out until the engine RPM drops, immediately after the drop, screw the knob in 2 portions

@Brillendrager It's a bit different on turbofan engines, which often use automation for fuel mixture. Good question though.

Somebody correct me if I'm wrong, but I'm pretty sure the 800 uses FADEC (as opposed to earlier 737 series).
