As you mentioned, better or new functions would make a better user experience not just a fresh coat of paint. But I do like the more pronounced look of the quick access bar and putting undo in a better location as it does improve the visibility and discoverability of features and its a great feature for power users.

nice video. at 1:27 you said it seemed that we loose a some screen space; in this case here is my solution : this is the shortcut that i use CTRL+F1. and it's toggle . thank you for your sharing have a nice day .

Nothing major changes here so I also have the same thoughts as you. I didn't know about MS Office Updates until I saw your video. I just downloaded the new OS of Windows today.

Please give tips on libre office spreadsheet as well. Libre office is compatible with Microsoft office and its free as well.

I think this new excel design looks like Mac Excel design and Microsoft is making it change the more modern views.
Besides the ribbons, I have focused much more functions like Lambda helper functions [Map, Reduce, ..], improvement of page hiding regulations, in the view tab, the new navigation panel (so impressive) and data ribbon (from the page)

Microsoft Office Professional Plus 2019 doesn't have an office insider

Annoyingly, you do lose a row by having the Quick Access Toolbar below the ribbon. The benefit though is having full-sized named buttons.
