Mmm yummy! 🤤 I’m diabetic and gluten intolerant but I can adapt this using Monk Fruit/Erythritol sugar replacement, GF and puff pastry. I have all the ingredients back home in Australia but in a hotel in Bali so going to have to wait till make these. Once I’ve made them can I keep some of the uncooked ones in fridge or freezer.? Just for portion control that’s why I don’t buy the giant GF apple pies from the grocery.

Instead of folding dough circles into semicircles, cut out squares or rectangles and fold them into rectangles, triangles, or squares, respectively--NO wasted dough.

Change the filling for ham and cheese, or minced meat with chopped olives and cubed potatoes, or cheese and onion, or cheese bacon and prunes and you have some amazing empanadas
