11 years later and you are still helping people learn. Helped me figure out i was taking the pan to too hot, i was going for the mercury bead on the water test and things just were not turning out right on a consistent basis.

This is the BEST video on making a perfect omelet EVER!!!  This gentleman is so patient and smart and kind and totally knows his chef-stuff. Have to see more of his videos.

I just bought an All Clad skillet like yours. I use the mise en place technique as well. I also pre heat and use butter as well. One tip not mentioned is to bring your ingredients to room temperature so as not to cool the pan. For example the eggs and the cheese especially. Great delivery, excellent narration and like mentioned below, 11 years later and still making an impact. Thank you.

I have watched this video a long time ago and since then I have made thousands of omelettes, one every morning, in my steel pan. Thank you very much, with this video I could keep a healthy habit while not worrying about alluminum or teflon in my system.

Love it! I think the trick is to make sure the pan is really really hot before adding the fat and then it’s perfection as you’ve so nicely demonstrated.

Great to hear it worked out man! One other thing that I find helpful for my stainless steel cookware is to purchase Barkeepers Friend (just a few bucks at Target) for cleaning your pans. I don't use it every time I wash, but every few times or so, I sprinkle a little bit of Barkeepers Friend to help get any sticky residue off so that your pan will shine and perform just like new. Otherwise if you let the residue build up, you'll find that things tend to stick easier.

My wife and I just bought ourselves a nice stainless steel set for our 8th anniversary to replace all the posts and pans we had. I've made plenty of great omelettes with the various cheap non-stick pans we've gone through, but failed at my first attempt with the stainless steel pan. After doing some Googling I found your video and gave it a second try...what a difference! No sticking, no mess and the eggs even taste better. Stainless steel forever! Great video man!

I just got a stainless steel All-clad D3 pan and stuck eggs on it right away. I watched your video last night and made an omelette today your way, it was PERFECT. its like the pan repelled the egg, worked great. Slid right off. Thanks a lot.
There's definetely a bit of learning curve to stainless steel but I love it

Thank you for posting this as I've always failed at cooking omelets on stainless steel pans. I tried this and right away the butter burned so I had to reduce the heat and try again. I have a gas stove so maybe med-low (on the hotter side) was just too hot so I kept it on low and turned it to medium once I added the egg. It was perfect so THANK YOU!!!

One of the most if not the most important aspects of making omelettes is the number of eggs and size of pan used. The omelet made here is definitely an american folded style. The egg is thin and it consists mainly of ingredients. Thus the larger pan. For a french rolled omelet which is a thicker omelet and less stuffed ingredients a smaller pan is required to keep the egg from spreading too far out making it thin. The thicker french omelet requires a bit more manipulation because of this, taking into account the consistency preferred, I like mine just a wee bit runny inside. 
It's also important to take the eggs out of the refrigerator about an hour prior to using.

Good morning from England. I have three beautiful stainless steel pans made by a Swiss firm called “Spring”, no longer in existence alas and this is one of the best videos I have seen about using a stainless pan to cook eggs without sticking. Thank you and I think I will be trying this for breakfast tomorrow morning!

LOVED this video. I made an omelet yesterday in my new All-Clad pan without watching any videos and I left a bunch of egg stuck in the bottom of the pan. Using this video the next day, I ended up with a beautiful omelet and a clean pan. Amazing difference just by using the proper temperature and process. He explains it perfectly. I even used three eggs instead of his two eggs and it was fine. Thank you!
