This Quinoa Salad recipe is tossed with an easy lemon dressing, along with plenty of fresh veggies & herbs. Give it a Mediterranean flavor with sliced olives and feta cheese, or keep it vegan & dairy-free by adding cooked chickpeas, instead. It's easy to customize and will keep well in the fridge for up to 5 days for meal prep.

Ingredients:
2 cups dry quinoa, rinsed
3 1/2 cups water
1/4 cup extra virgin olive oil
6 tablespoons freshly squeezed lemon juice (about 2 large lemons)
1/2 red onion, chopped
1 large cucumber, chopped
1 red bell pepper, chopped
1/2 cup fresh dill, chopped
1/2 cup fresh flat-leaf parsley, chopped
3 green onions, white and green parts only, chopped
1/2 cup kalamata olives, sliced (optional)
fine sea salt & black pepper
1/2 cup crumbled feta (optional; omit to keep this recipe vegan)
