*Creamy Artichoke Sauce
This is a creamy, delicious sauce that is perfect for pasta. This recipe can be made in a snap! Eat this sauce with just pasta or add vegetables or vegan cheese...either way this dish is packed with flavour!
1 jar artichoke hearts in oil, drained *
¾ cup water
1 ½ teaspoons of vegetable broth
¼ cup olive oil
¼ cup fresh basil
2 garlic cloves
¼ cup cashews, soaked in hot water for 10-15 minutes
2 tablespoon nutritional yeast
½ teaspoon salt, more to taste
¼ teaspoon black pepper
*Note: 1 tablespoon lemon juice to be added if you use canned artichoke hearts that are packed in water
Instructions:
Put all ingredients in a blender and puree until smooth for 2 minutes.
Use immediately.
Serving suggestion:
Combine with cooked pasta ( I cooked 227 grams of spaghetti) and if you like, whatever lightly sauteed vegetables you prefer. For added protein, you can add rinsed cannellini beans. You could also top it with vegan cheese.
Substitution: If you don’t want to use cashews, you could instead use ¼ cup silken tofu.
