The Vegie is my favourite! We do a pita pocket with tinned Salmon or tuna, avocado pine nuts and salad, quick dressing Dijon and apple cider vinegar, salt & pepper 😍

Thanks Jane - fantastic ideas - I love a platter - fruits - cheeses - nuts etc at the end of a days exploring - it’s not supposed to be a dinner but we always find we eat it all and then no ones hungry so it becomes dinner - My secret weapon when I can’t be bothered cooking.

For our no cook meal it would have to be cheeses, cold meats and fresh bread along with pickles and stuffed peppers or sun dried tomatoes in oil. Maybe even swap the bread for flour tortillas 👍🏻

Great update well explained Jane....my no cook meal would be Lettuce, tomatoes, cucumber, cold tinned potatoes all chopped up and add salad cream all mixed in a bowl and served on slice of bread or a wrap or pitta bread you can also add a couple of boiled for sharing

I was searching for vegan camping foods that require no fridge, and this showed up somehow in the first spot. Thanks, YouTube, you were way off. Anyway, half of these foods require a fridge which in your title you have "no fridge". Maybe retitle and tag this differently =(

I love the no fridge one - we don't have a fridge or cool box when we go camping. I'd probably swap the tuna out for salmon, and the mayonnaise for salad cream, but that's part of the beauty of recipes like this.

Loving the veggie one 👍. My favourite no cook meal is usually a platter of whatever I have to hand! Oat cakes, savoury/ cheesy nibbles, houmous, cherry tomatoes, sliced pepper, cheese chunks, hard boiled egg that i cooked earlier with my breakfast 😉. As I find it difficult to cook just enough for one, next day's lunch is often last night's dinner served cold, pasta dish, chilli and rice, etc. Most are perfectly palatable cold and make a brilliant packed lunch in the rucksack for exploring 👍

I often make a rice salad with pre cooked rice (I’ve only been able to find it in England so the times I’ve camped abroad I’ve taken it from here). I add pre made salad, cherry tomatoes, olives and often cooked chicken, tuna, cheese, beans. It’s quick and easy and has all the different components of a meal (carbs, veg and protein). Edited to add that you can buy pre boiled eggs. They don’t taste like the home boiled ones but they can be useful at a pinch. Of course, when it comes to fish, you can use cooked prawns or cooked salmon. The possibilities are endless. You can also replace the rice with rice noodles (which you can buy precooked) or cous cous both of which just require boiling water in a bowl to cook.

Your meals look very delicious! I really like your taco idea. I never have tried humus. I look forward to it. I always like a peanut butter, banana and jelly sandwich using a nutritious ancient grain bread. Change it up with some apple butter with cinnamon. I really love sweet chicken salad sandwiches on the trail also. I keep my meats cool with a few frozen water bottles which I end up drinking when they thaw. No wasted weight.

I wouldn't count the Nature Valley bar as low carb (at 25 g per pair of biscuits), but you might try Yes! bars from Tesco at 5-8 g per bar, or Tribe choc peanut-butter bar at 12 g as well, from Sainsbury's (the other flavours of the latter have more carbs than this one).

My go to is definitely an acquired taste but I have rice cakes, smeared with Bovill, then sliced jarlsberg cheese and sliced mini tomatoes on top.

I've GOT to remember the second one. I'm SUCH a sucker for japanese food lol! Also I think the tacos could also be made but as burritos. Would make them easier to travel with I would say. :D
