If you want sago cooks well.. you need to boiling water first after that throw in sago inside the pot.. leave it a few minutes until sago became clear. Then rinse it with tap water . Then you can serve it with coconut milk.

it's good when using mango, sago pearls, jelly, condensed milk, evaporated milk & all purpose cream then serve chill. it's called Mango Tapioca here in the philippines. It's so delicious and sweet

Use more water for sago and keep it low heat. Can turn it off and leave in pot with lid on for a bit till its cooked through, which is see through completely and no white chunks at all. Otherwise it taste weird and hard

Advice from someone who’s hometown has sago in most of the desserts(Philippines) and from a chef, let the pearls soak in for 15 minutes before cooking then add more water and cook in medium heat. You get a thicker consistency and the middle of the pearls aren’t white but translucent which indicates it’s cooked and also it will double the size of the pearls

If your coconut milk is a bit chunky or settled into layers, you can try to blend it. Blend them really well. Then, it should be okay to use. As long it does not turn bad.

Here in Brasil we eat sago in a different way... You soak the sagu first, then you cook the sagu, when the sagu it's transparent you throw the water away and "wash" the sagu only with running watter. In a pan you put wine, sugar, 1cup of watter and some people like to but cinnamon sticks and that thing that looks like a flower, a star... Here we call anis. When starts to boil you add the sagu, cook for 15min and let It cool. Some people like to add vanilla cream on top of it as well
