It’s so funny that my grandma used Sago years ago in Poland and still does now in Germany. She usually makes something sweet with strawberry’s and rhubarb. It’s delicious!

I’m I’m wondering if you can make this I call it rainbow sushi burrito

Ingredients:

• Sushi rice (2 cups, cooked and seasoned with rice vinegar, sugar, and salt)
• Nori sheets (large, seaweed sheets)
• Avocado (1, sliced into thin strips)
• Cucumber (1, julienned)
• Carrot (1, julienned)
• Bell peppers (assorted colors, thinly sliced)
• Cooked shrimp or tofu (sliced into strips)
• Pickled ginger (for garnish)
• Sesame seeds (for garnish)
• Soy sauce or a dipping sauce of your choice

Instructions:

1. Prepare the sushi rice:
• Cook the sushi rice according to the package instructions.
• Once cooked, season the rice with a mixture of rice vinegar, sugar, and salt. Let it cool to room temperature.
2. Prepare the fillings:
• Slice the avocado into thin strips.
• Julienne the cucumber and carrot into long, thin strips.
• Thinly slice the bell peppers into colorful strips.
• If you’re using shrimp, make sure they’re cooked and sliced into strips. If using tofu, slice it into thin strips as well.
3. Assemble the Rainbow Sushi Burritos:
• Lay a bamboo sushi rolling mat on a clean surface. Place a sheet of plastic wrap over it.
• Lay a nori sheet, shiny side down, on the plastic wrap.
• Moisten your fingers with water to prevent the rice from sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving a small border at the top.
4. Create the colorful layers:
• In the center of the rice, arrange the avocado, cucumber, carrot, bell pepper slices, and your chosen protein (shrimp or tofu) in colorful lines.
5. Roll it up:
• Lift the edge of the bamboo mat closest to you, and start rolling the nori and rice over the fillings.
• Use the bamboo mat to shape the roll into a tight cylinder.
6. Seal the roll:
• Wet the border of the nori sheet with water to help it seal.
• Continue rolling until the entire nori sheet is wrapped around the fillings.
• Press the edge of the nori sheet to seal the sushi burrito.
7. Slice and serve:
• Remove the plastic wrap and place the rolled sushi burrito on a cutting board.
• Sprinkle sesame seeds on top for garnish.
• Using a sharp knife, slice the burrito into bite-sized rounds.
8. Serve and enjoy:
• Arrange the colorful sushi burrito rounds on a plate or serving platter.
• Garnish with pickled ginger and serve with soy sauce or your favorite dipping sauce.

Sago and tapioca pearls are the exact same thing, you just chose two different sizes.
