I'm SO glad you explained the tahini trick! I have always gotten so frustrated and defeated when trying to make a sauce with it and now I know, I wasn't doing anything wrong! Just a little more patience and water is all that is needed!

Hi Laura! I'm from Egypt and Falafel is a traditional food in my country but we don't make it with chickpeas we use horse beans. You peal it, crush it and leave it over night then we add lots of greens like the roots of the scallion, leeks, cilantro, dill and parsley. We also add onion, garlic, baking powder and spices (salt, pepper, coriander and cumin) some add chili powder it's optional. I'll definitely give a try using chickpeas this time. Thank you for sharing <3

Yessss Laura you are so right about using soaked beans rather than canned! Lebanese people sometimes use fava beans along with the chick peas too. There are different variations as falafel is made in many different countries. And yes it should be GREEN inside just like yours. Now try making some stuffed grape leaves! Vegetarian filling is the best ;)

Hi Laura u did great job .there is one thing when you friy them u suppose to do in deep pan because the falafel will sunk to the bottom of the pan and when it start cook it will rise to the top by it self that way it will cook from in and out side at the same time . and ofcours with amba is perfect . I love you laura God bless you and your family.

I just made this, and it was delicious ! :)
The falafels were both fluffy and crispy, even though I made them on a pan...

I do think, however, that it could use some more garlic.

And here's a tip for anyone else wanting to try it: make sure you dry your chickpeas before you grind them, mine were just drained and I feel it added too much water to the mix.

Just made them today. They were awesome!!!
The only thing is the tahini sauce was a bit bitter soo it was good with falafel but by itself the sauce was a bit bitter.
