In this video, Dr. Berg talks about green bananas and plantains on a keto diet (ketogenic diet). The glycemic index on green bananas is fairly low compared to ripe bananas and definitely an over-ripe (brown) one, but the resistant starch greatly helps reduce the blood sugar spike.

This explains why East Africans are so thin with low body fat and west Africans tend to carry more body fat. East Africans consume more Green bananas then any other place in the world and they do not fry the bananas in any oil they steam it in banana leaf. They eat this with every meal. Uganda is the largest producer of green bananas in the world. They also tend to eat only when they are hungry, often consuming 1 large meal a day. Thank you Dr. Berg.

Thanks so much Dr Berg. I'm from West Africa and love green plantain chips (you should try them with a pinch of sea salt and black/white pepper). I've been missing this because I thought it had high starch content. I'm so pleased with this information and I'm gonna share it with my African keto community. God bless you

I’ve eaten plantain chips and tostones (fried green plantains) in moderation while going Keto and fasting and it has not slowed down my results

I eat regularly boiled smashed green plantain with vegetables, a lot of onions with omelette or tuna steak on the side for my daily breakfast. Because I don't like the taste of bread. So far so good. 42 years old and meds free. Food is our medicine. This is one of our staple food in the Caribbean.

Dr. Berg, I am confused. From what I have always heard, if you cook a starch and then let it cool, it becomes a resistant starch. Now, some people said that if you reheat it, it ceases to be resistant. But, I recently read of a study they did that proved that if you cook the starch, cool it and then reheat it, it actually improves twice to be much lower on the glycemic index. And, here you are saying if you cook it at all ... (sigh) I don't know what to think.

Green bananas are our staple food in Buganda(Uganda). We call them matooke and we prefer to steam them.

A boiled green banana OR plantain still has a pretty low GI index. So even if its not ideal on a keto diet, its still great for diabetics or others trying to eat a low GI diet. This was a panafrican public service announcement from your 🇳🇬 sis. ❤

Green bananas are verry bitter if eaten raw and not worth it unless you steam or boil then. Also keep in mind that when the bananas cool down say if you eat then cold then they will recover the resistant starch once again. It has sompthing to do with the heating that breaks up the starch molecules but when they cool down again they combine. Resistance starch is not actually destroyed. Same with potatoes, cold cooked potatoes are lower glycemic than hot cooked

Cooking any carb means raising the glycemic index, very useful information.
That’s the reason we should steam or boil sweet potatoes or raw bananas instead of baking them coz baking further dehydrates food and glycemic index goes high .

I'm so glad you made a video about green bananas and plantains! I'm from the Islands and my people eat them A LOT. They are both great in soups but plantains are normally fried in shallow oil, broiled or boiled and eaten as a side dish. I'm surprised to know that cooking either of them destroys the resistant starch. They really don't taste good until they're cooked so is there a tastier way to cook them and still get the benefits?

I eat mangú every once in a blue moon and have never experienced cravings. Mangú is made by boiling green plantains (NOT green bananas –it's not the same thing). After boiling, mash them in a bit of the same boiled water. Butter can be added for a smoother texture. Mangú, salmon, and avocado is a meal for the gods. Some day I will eat this meal again and record if there is a sugar spike.

Green banana is not bitter when you peel it then cook it both of them can make Shakes raw and must be peeled for cooking

I have been doing my own research on myself regarding resistant starches especially those coming from pasta and potatoes, and what I have found through blood glucose testing 2 hours after taking part in a meal with cooled down potato stored in the fridge at least 24 hours and also pasta 24 hours after cooking is I find that my ketones are not affected nor is my glucose affected. I am now further researching this with PEER- REVIEWED academic reports on EBSCO host.. Bottom line: Everyone is different and we all can do trial and error/success with resistant starches. This is a game changer. I don't have to cut out organically grown potatoes, pasta and rice as long as they're prepared correctly. Also these foods should NEVER be a staple, but they can help someone who feels too restricted.

Cuban Fufú -- Mashed Plaintains with Garlic

Yield: 4 servings
Delicate mashed plantain infused with garlic side dish or entree.


INGREDIENTS:

3 large medium green plantains
3 cloves garlic, mashed
1/4 cup green onions
4 cups chicken stock
juice of one lemon
salt and pepper to taste

Don't know about plantains, but unripe green bananas are perfectly fine and full of vitamins. They taste like raw potato though as it's pretty much starch. Good for fibre and if you have upset tummy runs.

Dr. Berg always has the answers I’m having diarrhea and it’s been going on for three weeks narrowed it down to you needing probiotics and I looked up pre-biotics and green bananas are one of them and he always has the answers thank you

Green bananas are NOT the same as the bananas some carb-eaters add to their corn flakes. You definitely don't want to eat green bananas nor plantains raw. End of discussion.
