I have a plastic dish pan in my refrigerator. I put all my meats in there so it doesn't leak everywhere. Then if it does leak, I just wash the dish pan out and use it again. I've done this for quite a few years now. It's saved me so many times from a massive cleanup!!!

I was watching the NYS Gov speak today about the weather crisis we are having. All she did was talk about the snowplows. She didn't say one word about downed power lines, lack of electricity. She and others want us all to go electric everything. Glad I started emptying out my freezer for canning. Also, no one is going to take my gas stove. When we had 4 feet of snow a few years ago, my gas stove was my main source of heat. I filled my canners with water and heated them on the stove. Then I just let the heat from the hot water radiate into the kitchen.

Excellent information. I went to school half a century ago, back when Home Economics was still taught to all of the girls. Even back then we weren’t taught that much about proper food storage. It’s kind of sad, when you think about it. I have done something with food almost every day since then, and I still haven’t used algebra.

Regular cleaning tip. I divided my kitchen into 4 parts. I clean an inventory 1 section each week. Once a quarter there's an extra week to work on my food storage.

One thing I learned from my son (a chef) is that restaurants use ozone water to clean their fruit and veg before storing it, to extend its life. A home ozone generator off Amazon cost about $45 five years ago, and it’s just a little gadget with an air tube (like a Foodsaver lid sealer) with a ceramic ball on the end. It cannot be used safely indoors (ozone is what kills people sometimes in a lightning strike!) but in a ventilated area like a porch. I take a gallon of clean water, put it outside and treat it with ozone for 20 mins. Then immediately put all the produce into the water and slosh it around a bit then dry thoroughly and stash in the crisper drawers. The ozone kills bacteria and viruses and funguses (don’t use it if you’re fermenting) that cause spoilage. I find it very useful in the summer to buy time until I have harvested enough cukes to make my pickles. I have been very pleased with this and it has saved me a lot of money. The only time I toss out spoiled produce is when I forget or get lazy.
Ozone treated water (you cannot store it—the added oxygen molecule dissipates) is said to be very good for SIBO and other health issues. You can find videos here on YT about it.

May I add that I have found that block cheeses stay good in the refrigerator for many months if I
keep them vacuum-sealed. Any kind of cheese, and even cream cheese, lasts.

Stay safe up there as the big nasty storm comes thru Michigan! We're gonna try not to get blown away here in northern Macomb county, we're ready to go. We've got the generator, the camping lanterns, I'm making a fresh pot of chicken soup and another of chili to microwave the next few days. All we need to do is sneeze on our power lines around here, and it takes a while to repair them when the weather continues to suck.

We bought a new fridge because my hubby wanted a bottom freezer. I didn't realize that I can't even reach the top shelf so we lost fridge space but mu hubby gained the job of cleaning it.

Found 10 yr old vacuum sealed ground venison in my freezer. Decided to thaw it out and cook it up and see if it was ok. It was perfect! I was amazed but thrilled. Was kept below 0(f). So always check before you chuck!

I'm currently re-certifying my food safety manager course, and yes, this info is up to date. Except, lol, it's Negative 18ºC = 0ºF. I know, lots of notes to read. You should see the chapter on safe cooking temperatures.

One thing you can do with some spices that everyone buys dried. Oregano, sage, thyme, things like that, is mix up your favorite blends and add them to a small bottle of olive oil and give as gifts. It's a good way to use up those spices that have been hanging out in the cupboard for a while. Extends the flavor and is great for things like Italian bread or rolls, pizza dough, tortilla dough, so many things. A question Leisa, have you ever heard of storing eggs in barley? Farm fresh but layered in barley and the video said good for at least 6 months. I have not heard of that one before?
