Simple Tomato, Basil and Olive Baked Cod

No gluten, no fuss.
This is a delicious and quick dish that you will want to serve again and again. Ideal for friends that can’t have gluten in their diet and just as tasty for those who can.
You will need: (Serves 4)
• 2 x 210g Heinz Tomato and Basil Pasta sauce
• 1 x can diced tomatoes
• 4 x 100g cod fillets skinned & boneless
• 100g black olives pitted and chopped
• 300g mashed potatoes
• Side salad
Method:
1. Preheat oven to 220C/425F/gas 7.
2. Combine in a large bowl sauce, diced tomatoes and olives.
3. Pour mixture into a 20cm x 30cm (approx.) baking tray.
4. Evenly place cod fillets on top of sauce and place in oven.
5. Bake for 15 mins or until fish is opaque white throughout.
6. Serve with a side of mashed potatoes & fresh salad.
