▣ Chocolate Castella Cake Recipe|Ohyoo Cooking

▣ Ingredients:
Egg yolks 90g
Egg whites 150g
Cake flour 40g
Cocoa powder 25g
Unsalted butter 55g
Chocolate(62%) 25g
Milk 75g
Sugar 55g

▣ Mold size:15 × 15cm

▣ Baking:155℃/311℉ ⇨ 70min

▣ Method:
1. First, separate the egg whites and egg yolks, and freeze the egg whites for about fifteen minutes.
2. Heat the butter, bring to a boil and turn off the heat, add the sifted cake flour and cocoa powder, mix well, then add the chocolate, let it stand for a minute, mix well.
3. Add the milk, mix well, then add the egg yolks and mix well.
4. Whip the egg whites until they are curved, then mix well with the chocolate batter and pour into the mold, add hot water to the baking pan and bake.
5. Confirm whether the baking is cooked, you can use a bamboo stick in the middle, if there is no wet batter, it is cooked, out of the oven, remove on the drying net, ready to eat ~

Really good if you follow the instructions correctly! I baked it for 70 minutes and the side and top came out hard, but the inside was perfect and soft! Next time tho, I would bake for 60 minutes or a little less

The cake is so light and guilt free lol. You can make with baking splenda for ppl who cannot have sugar

May I ask if we should cut the cake while it is still hot? I find the cake deflates after sitting on the dry rack. If cut while still hot, would it avoid being deflated? Thanks so much for your recipe.

I have one doubt, why do you freeze the egg whites? I've always seen instructions to use the eggs in room temperature. And by freeze the egg whites, you actually mean the freezer, or just the refrigerator?
