Fives as surround is the best decision I have made for my system. The soundstage is so much fuller and wider, I cannot believe what a major improvement it is over the One's. Do not listen to anyone telling you differently. Yes it's expensive and yes it is definitely worth it.

Swapped out the Ones for the Fives yesterday. The Fives seem to allow the Arc focus more on the dialogue. The clarity on the Fives are definitely better when watching movies. Crazy expensive as surrounds, but I don't see myself returning them.

What if I just want them to sit left and right of the soundbar? Should I play them on full sound (basically left and right stereo)

Wouldn't the best choice be to use them up front for a right and left channel + the arc, or another center speaker? This way would also be much better for two-channel stereo .

Ended up going with the Arc, 2 Gen 3 Subs, and two Fives as rears. I have the dual subs on either side of the Arc around 18 feet (6 meters) from my main sitting position. The rear Fives are 9-12 feet (3-4 meters) behind the main sitting position on speaker stands mounted horizontally. I'm mostly TV viewing during the week and music on the weekends. The Sonos system with the Fives do a much better job of being more immersive with a richer, deeper sound with more bass you can feel compared to my old Nakamichi 7.2.4 system. I would probably gone with the One SL if the rears were under 3-4 feet (+/- a meter) from my couch.
