Chicken piccata is an Italian-American favorite and one of the easiest weeknight dinner recipes to make at home. Thinly sliced juicy chicken breasts ("scallopine") are dredged in flour, seared with a golden crust, then simmered in a lemon butter sauce with a touch of capers and parsley. It's a beautiful and tasty dinner that comes together quickly!

In other words, chicken piccata is the perfect fusion of Italian cooking in America. Traditionally, piccata is an Italian dish consisting of thinly breaded veal (or other proteins) with a lemon butter wine sauce. But today we're using chicken, and I'd say we've perfected this dish that's dotted with garlic, capers, and fresh parsley. The more herbs and garlic, the better, right?

Thank you for this lovely recipe, Lisa. I made it tonight for my husband and I, for dinner, and we both thought it was restaurant quality. I used broth in place of wine. We put the chicken piccata on a bed of spaghetti and soaked up all of that beautiful, tasty sauce. It was delish!💖 my husband says its one of the best dishes I've ever made!

...I have made this for years, and it's a favourite... good instructions, and would add, that if you set that chicken in the refrigerator ( on the plate ) for10 minutes, or in the freezer for 3-5 minutes, it will "seal" the coating and I always do this, no matter what it is that's been dredged.:)

I make mine very similar but I actually take lemon slices and cut them in to very small wedges and cook that with the chicken in the sauce. Adds a nice texture and extra bit of lemon.
