Not a batonnet, batonnets are typically only done with carrots here he used a potato which is referred to as a Allumette or Julienne potato, Battonets are 1/4 by 1/4 by 2 inches, Allumettes are 1/8 by 1/8 by 1/8 and is also referred to as matchstick potatoes.
