I'm salvadorian an this is how my mom made pancakes. She used oil an the pancakes would get crispy like that. Always loved them like that.

This is how my mom makes pancakes. I never used to see how she's make them for breakfast when I was a kid because they'd be plated by the time I got downstairs. It took me a long time to get the same result as an adult.

Anytime I'd ask her what I could be doing wrong she'd just say use more butter without further details.

Made me hungry for pancakes. I love the crispy edges too. My preference is for supper thin pancakes....almost like crepes. Clarified butter a great tip. And the lemon zest would add some brightness I think would be really good.

They call this the “triple bypass” pancakes at my local diner and it comes with a side of thick cut smoked bacon and eggs over easy fried in duck fat. It’s one one of their best sellers.

This recipe is fire. One of my favorite pancake recipes. Fluffy, crispy and salty, sweet. I think 3 T of salt was a little too much. I would go 2 T. I stopped searching for the perfect recipe once I ran into this one. Try it, you'll like it.

Curiosity got to me. I made a quarter recipe. First I clarified butter which is a pain but cheaper than buying ghee. The only change I made was to reduce the salt. When I measured out the salt it was just too much and I’m glad I did. This must be a typo. The amount of baking powder makes the batter instantly billowy and full of gas. The first one cooked up wonderfully with great crispy edges. It’s surprising light and airy considering all the fat (I did not top it with more butter). As I kept cooking the pancakes got less and less airy but still a great contrast between the very crispy edges and the super light interiors. Halfway through I ran out of butter and I cooked the next in olive oil. Not nearly as good. The last bunch I cooked without oil in a nonstick pan (my kids don’t like the “hard edges”) and they were not good at all. They tasted very eggy and had a very displeasing flabbiness. It made 10 small-medium pancake so the full recipe will feed a small army and require a crap load of butter to fry up. I did not taste any lemon and wonder if it’s really necessary. This recipe was clearly designed to be fried up and only fried in butter and for that reason I probably will leave this low on my pancake list. And since the batter deflates quickly I don’t think cooking them one at a time is a good idea, especially if doing the full recipe. It is very delicious and I would gladly eat these pancakes if someone made them for me.

The Best Way I know to add Butter and toppings is to make a hole in the middle of the stack with a fork then add the butter and real maple syrup! That way it soaks into the layers!

THESE ARE MY PANCAKES! Y'all are babies if you hate crisp outside rings on a pancake. This is the way my mom always made them and it's awesome. Personally I like it crisp on the outside and a little, just a little undercooked on the inside. That's heaven right there.
