Chicken Stew FOR THE SOUL!

This is a rich chicken stew that tastes just like a Sunday roast. Chicken thighs are simmered until falling off the bone and the cooking liquor is reduced until thick and gravy like, all before little clouds of chive & cheddar dumplings are plopped on top to steam and soak up the sauce. This is true winter food that is best served on the darkest of days.

Ingredients:

US:

1-2 tbsp oil
2 lbs chicken thighs, skin-on, bone-in,
3 celery stalks, trimmed and cut into bite size pieces
3 large carrots, peeled and cut into bite size pieces
1 large onion, roughly chopped
A few sprig of thyme, leaves picked
1/2 stick butter
2 tbsp plain flour
4 cups chicken stock, store-bought
Sea salt & ground white pepper

For the dumplings:
1 stick cold butter, cubed
1 & 3/4 cups cup self raising flour
A good handful of chives, finely chopped
1/2 cup buttermilk
1/3 cup grated Irish cheddar
Sea salt and freshly ground black pepper

Metric:

50g butter
2 tbsp plain flour
1 litre chicken stock, store-bought
Sea salt & ground white pepper

For the dumplings:
100g cold butter, cubed
225g self raising flour
A good handful of chives, finely chopped
100ml buttermilk
50g grated Irish cheddar
Sea salt and freshly ground black pepper

To all who commented ‘ oh this looks so delicious, must make it soon’. Run don’t walk and please make it! I was just so bored with my same recipes and wanted a delicious rib sticking meal. Got up early, bought all the ingredients. Was like Donal was in the kitchen directing me to something special . I am ready to follow more of his recipes as this was real food. Tasty and I was so proud of the praise I received. Donal makes real good for real people ! Get your pots n pans going kids!!!

I can never get over how lucky your wife is to have such a handsome man cook for her. My dad was like that, just portuguese and a little more serious but equally skilled and dashing! He is not longer with us, sadly passed away way too young, so I reminisce with your videos.

Made this tonight for the family (sans dumplings) served with mixed greens and cheesy toast ... BIG hit - simple simple to make and perfect for snowy evening! Even my picky brother didn't come up for conversation - my dad (86 y/o) went back for seconds! thank you!

I don't care if it's 100 degrees outside, I've got a craving for this delicious dish and I'm going to make it this week! This is Real comfort food...even more tasty than a beef stew. Chicken is SO flavorful and good.

If I can make a suggestion it's better to sweat your Mirepoix and seasoning with the lid ON, very low for around 10-15 min, untouched. You get much more flavour that way. Using that method you can make a soup out of just potato, onion and garlic taste out of this world! Smashing Pot, all the same!

Omg!! This recipe is amazing. I make it about twice a week my family can't get enough plus if you leave it in the fridge over night the chicken becomes more infused with all that loveliness. Thankyou xx

My oven broke recently and we haven't been able to get it repaired yet, so for Christmas dinner I made this stew! It was superb; I added in some mushrooms and used rosemary instead of thyme (as many members of my family aren't the biggest thyme fans) and we all loved it. So glad I found this recipe!
