Keto Pizza Crust – NO Cauliflower

The only keto friendly low-carb pizza crust without cauliflower that actually tastes like a regular pizza crust. GUARANTEE!

Cauliflower pizza crusts hardly ever mean low-carb or keto-friendly. In most cases, the crust has a tiny bit of cauliflower and just makes the crust thinner to reduce the amount of carbohydrates. Don't be fooled by cauliflower pizza crusts, my keto friends.

Make this ketogenic pizza crust and you'll be convinced that you can eat pizza that doesn't have a different taste from the real thing. Your kids or spouse won't even know they're eating a keto pizza.

This recipe is simple and easy to make. Make more than one at a time and freeze the extras.

///// KETO PIZZA CRUST RECIPE

INGREDIENTS:
3/4 to 1 Cup Almond Flour (90g) (replace little with coconut flour for more crisp)
1 Cup Mozzarella Cheese
1 Egg
3 tbsp Cream Cheese
1 tsp Italian Seasoning (optional)
1/2 tsp Baking powder
1/2 tsp Salt

DIRECTIONS:
1. Place dry ingredients together in a bowl (almond flour, mozzarella cheese, seasoning).
2. Microwave dry mix for 32 seconds just to soften the cheese.
3. Lightly mix the egg and room temperature cream cheese together. Cream cheese chunks are ok.
4. Mix both dry and wet ingredients together to form a dough ball.
5. On parchment paper apply a thin layer of olive oil big about 12 inches in diameter and place your dough ball on it.
6. Place another sheet of parchment paper (or heavy freezer paper for wrinkle-free rolling pin action), and press down with your hand on the dough before using the rolling pin to get it started. Lightly press with a rolling pin to spread the dough.
7. If you want a nice round shape, use a frying pan lid to shape it
8. Remove the top sheet of paper and place the dough into the oven at 390º F for 10 minutes. Keep in mind we don't want to fully cook the crust because we still need to add the sauce and toppings.
9. Remove from oven and add sauce, cheese, and toppings.

What makes pizza sauce different than pasta marinara sauce? The answer is more tomato paste. So, find yourself a no-sugar-added marinara sauce that you like, and add 1-2 tablespoons of tomato paste to 1-2 tablespoons of marinara. Simply 1:1 ratio. The sugar you see in tomato paste is ok because it's naturally occurring and you only have a small amount.

1. 3/4 cup super fine almond flour
2. 1/2 teaspoon baking powder
3. 1/2 teaspoon of your favorite Italian herbs & spices, salt & pepper
4. 1 cup grated mozzarella cheese
Mix well, put in glass pie dish pressed in evenly before putting it in the microwave for 32 seconds.

5. Mix 3 tablespoons room temperature cream cheese pulsed with one egg in food processor (just a few pulses).
Then add the cream cheese/egg contents into a mixing bowl and add the contents of the pie pan pizza base mixture. Mix it up by hand, it will be gooey.

Preheated oven at 390 F. Olive oil up baking parchment for the bottom & freezer paper on top of the dough. Roll out into a round shape. Put pizza base in oven (still on the parchment psper) for 10 minutes at 390 F. Remove from oven.
Put on your pizza sauce of your choice & other toppings. Slide pizza off baking parchment onto baking tray/cookie sheet/back of a metal large pie pan & slide the pizza again onto oven's baking rack. Ensure edges of the pizza base are supported by the tines of the rack. This step allows the bottom of the pizza to brown. Bake another 8 minutes maximum at the same 390 F. Take out of the oven by sliding pizza onto a cutting board, slice it up, eat & enjoy!

I made this last night but put it In my iron skillet sprayed with almond oil. Amazing!!! Also sprinkled a lit ground flax seed and coconut flour on the parchment paper instead of oil. Oil in skillet 🍳

Super simple to make. I made this tonight. My kids and nieces all loved it. I real love pizza and I thought I was going to have to give it up forever. Now, I can eat it and not feel bad about it. By the way I lose 30 lbs in the last 6 weeks and I feel great.

I find mixing the ingredients in a stand mixer gives a perfect and consistent result, plus you get a solid bicep and lower back workout pulling that thing out of the cabinet, and it also helps feel justified for all the money you spent on it. Just a win all around.

TIP: less cream cheese will help to keep your crust crispier...
...you can add 1/4 teaspoon xanthan gum, too.
Can add some grounded parmesan cheese, too.

I tried this today and I must say I think this is the best keto pie recipe. The wife and I really liked it. I did the math with what I used in it and this comes out to like 5.1 carbs for 1/4 slice...Can't beat that. That was with Italian Sausage and Pepperoni....:)
