Spoiler alert! knowing what I learned about the significance of antioxidants and polyphenols in fresh coffee, I had no choice but to buy my own roaster. So I will be making my own delicious fresh-roasted coffee! I'm super-excited about sharing my discoveries! Cheers!

My favorite is organic coffee from Kenya, but it has been very difficult to find much for a while. I have been enjoying Ethiopian coffees lately. I started buying green and roasting in 2016 or 2017. I bring my French Press ans coffee with me on the road. I got tired of buying coffee at gas stations and tossing.

I read a study that said filtering the grounds through a paper filter improved the anti-diabetes benefits of coffee. (Again) I think it had something to do with specific polyphenols. Really interesting topic Chef.

I only have instant (Vittoria) coffee. I don't have the equipment for fresh ground, so I suppose this is not a good way to drink coffee but that's the way it is. Cheers Rosemary Perth Western Australia 72yrs

So can you purchase a large bag of coffee beans, and only take out the amount of beans you need for a few days, roast them yourself, grind them, and use the ground coffee grounds as needed.

Actually I cut back on coffee recently and I’ve stopped CRAVING it, but I still do enjoy a cup on occasion.

This is interesting and informative, but for me a cup of coffee (organic decaf), brewed in an Italian moka pot, is just a vehicle for the butter and egg yolk that I add to it. 😊

The jitters are also so.ply from the caffeine content, not just fungus. An darker roasted coffee can be highly acidic, which can be bad for this with health issues. Green coffee is a good thing. But many coffee in USA uses harsh chemicals to prepare. This cancuase nervousness too.

I haven't read through all the comments but, my favorite coffee is Costa Rica Dark Roast. Doesn't seem likely I'll ever give that up. What about K-cups?

Typically, you want to have your coffee unroasted, as this carbonises all the goodness. Or best to have 50/50 roasted and unroasted if you need the taste or add chicory etc for flavour. Grow and dry your own coffee beans, dry and grind/pulverise to powder, make Greek coffee ('don't boil' to death, let it rise then pour into short cup) this is best way to capture all the goodness. You can also add spices (500mg of each - true cinnamon, ginger, cloves, cayenne pepper, chaste tree berry or Hawthorne berry powders), bring to boil for 30 seconds pour into cup add tablespoon collagen then add Greek coffee with cup of warm unhomogenised milk (don't' boil milk) makes beautiful healthy cup of coffee.
