What I eat in a day! I eat like this nearly every day given that I follow the Dave Ramsey Zero Based Budget. What I ate today was a tough video to record but I'm so glad you get to watch this video. I may seem like a what I eat in a day as a vegan or what I eat in a day as a vegetarian but it's simply what I ate today while I'm on a budget! I hope you enjoy this video it was highly requested so hopefully, it meets your expectations.

Breakfast: Overnight Oats

Lunch: Strawberry Salad

Dinner: Buddha Bowl: quinoa, red beans, golden beets, sweet potates, and corn.

I thought the “$50 monthly grocery haul” statement was a typo 😱😂🤭....this would be hard, I thought my $50 a week budget was minimalistic, but i guess not

Ever try brown rice, lentils, celery, onion, garlic, canned tomatos and seasoning stew? Very yummy. Nutrition packed and cheap!!

Evidence that "poor" seasons of life (job losses, divorce, college days, saving for a home, starting a new business, debt recovery, etc) do not have to equal eating mostly highly processed carbs. It means forgoing meat for cheaper proteins and cooking vegetable based dishes from scratch. What a terrific example of self discipline and self care you are in this area. No excuses and such a great (and grateful) attitude stands out in our society awash with entitlement. Well done. I need to take a deeper look at my own food budget. :)

I have now watched three or four of your videos, so inspiring. At various times I have had debt--in part I still do as I am paying of my unit. I have been using clippers on my hair for many years, now my significant other does my hair, I do his. I do cook mostly from scratch, and have a regular supply of veggies that I use weekly. I also make overnight oats with dried fruit, chia seeds, honey and water. When I eat it I add a bit of powdered milk. We are all adapting and changing over time. Enjoy the journey.

Simple, hearty, and just awesome!
I love how you store your food. That’s how I store everything (in mason jars) my family thinks I’m weird and over the top but it keeps everything so fresh, neat and clean. Gotta get back into meal prepping though 😑🙂

Wow I’d be starving if I had breakfast at 8 and lunch at 3:30. What a discipline! Your strong! Now I wish my country would have mason jars like yours. It looks so handy with the lids and they seems to take both heat and cold very well.
