The Vegan Butterfinger Challenge was created by @KeepingUpwithQueen-Eva
You will need these simple ingredients:
3 cups of organic cereal
1 cup peanut butter or almond butter
1/2 cup maple syrup
1 1/4 cups melted dark chocolate
pinch of Himalayan pink salt (optional)
Things you'll need:
mixing bowl
blender
fork
spoon
parchment paper or baking sheet
Instructions:
1. Grind organic cereal in food processor or blender until completely ground up
2. In a bowl, mix peanut butter or almond butter (at room temperature) with the maple syrup
3. Add the cereal and mix into the peanut butter
4. Line baking sheet with parchment paper
5. Form mixture into little bars and place onto baking sheet
6. Set in the freezer for 30-60 minutes
7. Melt dark chocolate by placing bowl above boiling water. The steam will slowly melt the chocolate.
8. Dip bars in chocolate mixture, using a fork, then set in freezer for 30 minutes.
(Alternative: If you don’t want to use chocolate, you can dip nut butterfingers in dairy free yogurt instead) *For preservation, store them in fridge/freezer.
