VEGAN BUTTERFINGERS CHALLENGE

Ingredients:
3 cups of organic cereal
1 cup peanut butter or almond butter
1/2 cup maple syrup
1 1/4 cups melted dark chocolate
pinch of Himalayan pink salt (optional)
Instructions:
1. Grind organic cereal in food processor until completely ground up (or crush using a pestle and mortor)
2. In a bowl, mix smooth creamy nut butter (at room temperature) with the maple syrup
3. Add the cereal and mix into the nut butter
4. Line baking sheet with parchment paper
5. Form mixture into little bars and place onto baking sheet
6. Set in the freezer for 30-60 minutes
7. Melt some dark chocolate or peanut butter chips by placing bowl above boiling water. The steam will slowly melt the chocolate.
8. Dip bars in chocolate mixture, using a fork, then set in freezer for 30 minutes. (Alternative: If you don’t want to use chocolate, you can dip nut butterfingers in dairy free yoghurt instead)
For preservation, store them in fridge/freezer.
