not using a puck screen on a six thousand dollar machine is diabolical. also ratios are recommend for beginners but when you get more into what you prefer to taste it becomes personal preference. for me personally i do 18.5 in 40 out and i don't really care about the time as long as it between 27-32 seconds its fine. id rather have a shot that tastes good than have a shot that isn't what i like but the ratio and extraction time was perfect. but i also drink the shot by itself so taste is far more crucial with just the shot than drinking a milk based drink

Very beautiful! How did you get your machine to start the brew at 4-5 seconds and for it to be so smooth? Mine starts flowing around 8-9 seconds. Also did you change your gicluer size?
