How interesting, I usually do a preshape and then shape the loaves, put them in the bannetons, and immediately stitch for more surface tension. I’m curious about what the difference is between doing that and letting it rest before stitching. I will have to try it!

Are you able to do a video on how to know when the starter is ready. My loaves were like hockey pucks, I think I let it over proof.

I guess I'm wondering why you're working your dough so much. I don't go through near that many steps. I cut my dough in half and shape and in basket then fridge. A lot less handling of the dough.
So why do you work it so much?
