Been working on laminations at home - baking is a craft and repetition makes you better.

Rather than bouncing from recipe to recipe, I focus on one recipe at a time in my micro bakery to get the technique down, and then when I'm happy with it I can move on to learning other recipes.

This is the third time I've made this formula, and I've stuffed the croissant with a dark chocolate pastry cream, giving it a new take on the classic pain au chocolat.
