Tacos Gobernador are a wonderful mix of taco and quesadilla, the are filled with a delicious combination of chunky pieces of shrimp and vegetables (poblano or bell peppers) and onion, tomatoes and a tasty mix of herbs and spices like cilantro, oregano, ground cumin, paprika, celery seed and some wonderful smokey Adobo Sauce. You can use either corn or flour tortillas, I like to gently brush some oil on my tortillas then put them on the griddle to toast lightly, then I top them with freshly grated Oaxaca cheese till melted, then I top it with a generous amount of my shrimp filling. Once on the plate I like to drizzle some of my delicious Tomatillo salsa or sour cream, these amazing Tacos Gobernador were made for a governor, but fit for a king.
INGREDIENTS------------------------
1 lb large shrimp (peeled, deveined and cut into nice size pieces)
1 C. Panko or little more
1/2 large onion (finely diced)
1 large diced Roma tomato (seeds removed)
1 large POBLANO pepper
2 large minced garlic cloves
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp mexican oregano
1/4 tsp celery seed
1/4 tsp ground cumin
2 Tbsp Adobo sauce
kosher salt (to your liking)
pepper (to your liking)
chopped cilantro (as needed)
Corn tortillas (as needed)
Freshly grated Oaxaca cheese (as needed)
4 Tbsp butter
Oil for griddle

1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp Mexican oregano
