Summer is just about here and we're getting ready by making some fun dishes starring peaches! Pie doughs have always intimidated me, but this galette couldn't be easier to make!

INGREDIENTS:

CRUST:
1¼ cups flour
½ teaspoon salt
2 tablespoons sugar
1 stick (8 ounces) cold butter
2-3 tablespoons ice water
2-3 tablespoons vodka

FILLING:
1 pound (about 4) peaches
¼ cup dark brown sugar
½ teaspoon ground cinnamon
½ teaspoon almond extract
1 tablespoon flour
½ teaspoon vanilla extract
3 tablespoons lemon juice

TOPPING:
1 egg, beaten
turbinado sugar

This galette looks fantastic! Making pastry in the food processor is a great idea. Pie crust is not high on the list of things I enjoy making, so I'll have to give this technique a try.
